Scrumptious Greek Chicken Breasts

An easy-to-make Greek Spice Rub, sun-dried tomatoes, artichoke hearts, mushrooms, wine and feta cheese make these Scrumptious Greek Chicken Breasts a recipe you’ll love!!

I adapted this recipe from the Secrets of Good Carb, Low Carb Living – by Sandra Woodruff, a cookbook I highly recommend. Here’s the recipe and a step-by-step pictorial follows.

Ingredients
  • 4 boneless skinless chicken breasts
  • 1 tablespoon Greek Spice Rub (see below)
  • 1 tablespoon olive oil
  • 2 cups mushrooms, sliced
  • 1 medium onion, chopped
  • ¼ cup sun-dried tomatoes, chopped, plus 2 T.
  • ½ cup white wine
  • 1 cup artichoke hearts, coarsely chopped
  • ¼ cup feta cheese, crumbled
  • GREEK SPICE RUB:
  • 1 tablespoon oregano
  • 1 tablespoon rosemary
  • 1 tablespoon lemon pepper
  • 1 tablespoon onion powder, or granules
  • 2 teaspoons garlic powder, or granules
  • 1 teaspoon salt
Instructions
  1. GREEK SPICE RUB: Combine all the spice rub ingredients together and mix well.
  2. Most chicken breasts these days are huge, so I cut them in half, horizontally, to make two fairly equal fillets each (4 pieces all together). Place each piece between two sheets of plastic wrap and pound to about ½" thick.
  3. Rub some of the spice mixture over both sides of each piece of chicken.
  4. Put the oil in a large nonstick skillet and heat over med-high heat. When hot, add the chicken and cook for a couple of minutes on each side, or until nicely browned.
  5. Remove the chicken from the skillet and set aside. Add the mushrooms and onions to the skillet, cover and cook over medium heat for several minutes, or until tender.
  6. Add the chicken back to the skillet. Scatter the sun-dried tomatoes around the chicken and pour the wine over the top. Cover and cook over med-low for 10 minutes.
  7. Transfer 2 pieces of chicken to each of 4 serving plates. Cover to keep warm. Add the artichoke hearts to the skillet and cook over med-high for a minute to heat through. Spoon ¼ of mixture and juices over chicken on each plate. Top with a tablespoon of feta cheese and serve hot. YUM!

Peel the onion and chop it. Wash the mushrooms and slice them.

Add the chicken back to the skillet. Scatter the sun-dried tomatoes around the chicken and pour the wine over the top. Cover and cook over med-low for 10 minutes.

Transfer the chicken to a serving platter. Cover to keep warm. Add the artichoke hearts to the skillet and cook over med-high for a minute to heat through.

Spoon the artichoke mixture and juices over the chicken and top with the feta cheese.
