Parmesan Baked Chicken

Really easy to prepare and so delicious, Parmesan Baked Chicken is a great way to turn ordinary chicken breasts into a gourmet entrée.

The cheesy crust helps keep the chicken breast moist inside, and the flavor is delicate and savory – very nice! Serve with Rice Pilaf and/or Roasted Pepper and Peperoncini Salad for a fabulous meal.

To prepare Parmesan Baked Chicken, all you do is slice a large chicken breast in half horizontally so you have two thin fillets (this is easiest if they are still partially frozen).

Put them between two sheets of plastic wrap and pound them thin. Dip the chicken pieces in beaten egg, then lay them in a greased baking dish. Sprinkle with lemon pepper and garlic powder.

Sprinkle freshly grated Parmesan cheese over the chicken pieces and press it into the chicken. Turn the pieces over and do the same on the other side.

Bake the chicken at 375° F for about 10 minutes in the preheated oven. Turn it over and bake for 5 more minutes, or until done.

Ingredients
  • 1 large skinless boneless chicken breast, split in half horizontally
  • 1 egg, beaten
  • Garlic powder, to taste
  • Lemon pepper, to taste
  • 4 tablespoons Parmesan cheese, or Romano, grated
Instructions
  1. Preheat the oven to 375° F. Grease a shallow baking dish and set it aside.
  2. Beat the egg in a shallow dish, grate the cheese, set both of these aside.
  3. Slice the chicken breast in half horizontally so you have two thin fillets. (This is easiest if done when it is still partially frozen.) Put the chicken pieces between two sheets of plastic wrap and pound them thin.
  4. Dip the chicken pieces in the egg, then lay them in the prepared baking dish. Sprinkle with lemon pepper and garlic powder.
  5. Sprinkle half of the cheese over the two chicken pieces and press it into the chicken. Turn the pieces over and do the same on the other side.
  6. Bake the chicken for about 10 minutes in the preheated oven. Turn it over and bake for 5 more minutes, or until done.
